Chicken Salad Recipe

I follow an awesome registered dietician on IG called Eleat Nutrition. Recently, she posted a super yummy and easy to make chicken salad recipe. Every single member of my family LOVES it. Highly recommend you try it!

We normally eat this refreshing salad without bread, but feel free to make an open faced sandwich or wrap it up in a tortilla. This recipe is slightly adapted to suit our family’s needs and tastes.

  • 2 lbs skinless boneless chicken breast, small cubes (boiled for 20 minutes)

  • 2 cup red grapes, halved

  • 8 celery, diced

  • 2 green onion, diced

  • 1 tbsp fresh dill

  • 1/2 cup reduced fat veganase (any mayo will do)

  • 4 tsp yellow mustard

  • 1 tsp salt

  • 1/4 cup sliced almonds

Makes 6 servings. Protein: 31.2g, Fat 18.2g, Carbs 11.2g, Total Calories: 318
